Default Meat question

Here in Virginia I can not get wholepacker briskets without ordering a whole case. I plan on about a competition a month April through November and I was wondering about freezing them for comp's. I got a case today to practice and 85lb case had 6 packers and cost me $186, I plan to cook two at each comp and wondered if others have this problem or can you go to the store and buy them individually in your area? Another thing is a case of six usually has 4 that are 11-13lbs and two that are 16 plus lb whoppers, I thought about grinding the big boys for burger, it would be cheaper than buying burger.

There are Restaurant Depots in VA where you can by one or 100 and pick and choose.

You can also freeze without issues and can trim down the larger if you want and grind what you trim...

I went on thier site Mike and put my zipcode in and the closest on is over 3 hours away, but it does look like a cool store.

You can check Wal-Mart. Around here, Wal-Mart has packers but Sam's doesn't. You can try Costco. They all seem to operate differently depending on location. I haven't priced them recently, but the last time I got 'em, they were less than what you paid.

I've tried Sams, Costco, Walmart, Kroger, Food lion, and all the local meat shops. All of them sell the flat only, a few are willing to order the packers for me and do but I have to take the whole case. I guess I will have to freeze them.

Buy the case and age it properly. Reserve the best 2 pieces for your contest and sell the remaining 4 to friends. Freeze what you don't sell for personal use.

I won't use frozen brisket for contests. When that moisture freezes it expands and slightly alters the texture of the proteins. It's probably not that big of a deal because when it comes to the other 3 categories, it's hard to find meat that wasn't previously frozen.

I have been getting mine thru Sysco, great folks, but sometime the packers are hit-n-miss, I'm for a couple of places to get 'em, for the just in case moments.

This issue has been brought up before (Previously Frozen Comp Brisket?).

I for one have not had a problem with freezing them.

I have a Sysco in my area and they want me to place a twenty case minimum to order anything. Way more than I want to order

Ouch - that is a lot. At Sysco near me they sell individual briskets. You don't even need to buy a whole case.
