Got a few of the beef back ribs from the market on Friday, and it's been kiling me to see them in the fridge. But, a Sunday afternoon cook is in order. Here we go!
I peeled the membrane off the back, then coated liberally. 1/2 with Earl Campbell's All Purpose, and the other 1/2 with Plowboy's Bovine Bold. They will be put on the drum over hickory for a couple of hours til is see a pullback starting on the bone. I want these suckers to be tender, but not too stringy. High heat I think will work.
