I don't like to waste charcoal so when I fire up the WSM I like to fill it. Two butts for pulled pork, 1 butt for chili, corned beef turn pastrami and a ham for slicing. Chili butt seasoned with fajita seasoning, abobo and cumin.

Pastrami skiced paper thin.

Ham sliced a little thicker.

Porks Pulled.

My son enjoys.

Thanks for sharing.

Didn't do a thing to it. Farmer Johns 1/2 ham. No rub or glaze. 4 hours at 230 cherry and apple chunks with K. Makes great sandwiches. Paid .77/lb.

That's the way to cook, enough to make your time worthwhile. The best part for me is showed it to my wife and she agrees.
