All I can say is wow about the cook and double wow about the jabs.

I wish the deer camp I am invited to in Georgia would put on a cook like yours.

I realize you are fairly new to the forum and maybe have not been here long enough to realize that I DO smoke a lot and cook a lot and share the results with the Brethren.

If you haven't noticed, I do not cook on a daily basis. maybe weekly if I'm lucky.
I don't feel the need to explain myself or my lifestyle to you though.
If my posts offend you, please do not open them.

Lady, you owe no one and I mean no one an apology for your beautiful and informative information you post. Ignore smart arses that flame you.

As if it hasn't been said enough, WOW!

Thanks for sharing Jeanie!

The grandkids were very fascinated with cooking the pig in the ground.

Cowgirl. ... 1 minor question I might have missed it as I skipped a few posts in there but where might I find the recipe for that side dish of spicy shrimp, that looks like heaven in foil pan!

The pig looks great don't get me wrong but if I have to choose between pig and shrimp... well I'll be torn I guess.

Wow that's cooking

Probably isn't going to be the most popular response in the forum, but I think someone is playing to the good-natured credulity of the brethren.
Just my thoughts.
...

Great stuff Jeanie!

Thank you for the kind comments friends.
If I owe an apology to anyone, it would be to all of you for not biting my tongue. I know better. Please excuse my thoughtlessness.

David, I used three pieces of metal to cover the hole....then buried it with dirt, making sure the edges were sealed. I cook pigs 125 and over underground and plan on at least 12 hours. Anything smaller will not take that long...you can do it in one day. It takes so long to burn the wood (about 5hours) to get a deep bed of hot coals, it's just easier for me to do that the night before and go to bed, letting the pig cook overnight.
(hope I explained that well. )

Good on ya, gal!

Arlin, thank you for that. (((HUG)))

Buster, I did get a deer! Thanks for asking.
The bed of coals are so deep that they last all night. You do have to use hardwood though and plan on at least one foot or more of coals.

jestridge, it does smell bad. lol

Quietone, I will get that shrimp recipe to you. Thanks!

Thanks JD.

Thank you again everyone, it's an easy way to cook a pig. Well... once you get the pit dug, the pig cleaned and the wood burned.

That is one awesome looking pig!

I think a lot of people are jealous about the way you live, being self sufficient in many ways (maybe even all the way) and still enjoying the good life and document it in a beautiful manner. I know I am

I was wondering did you do anything with the offal?!?
