Default Stocking for next weeks Big Burn

My Shirley arrives next week (did I mention I was getting a Shirley! Heh)

So this week I was doing freezer inventory and realized I had very little to smoke...

Well that’s just not gonna work.

I can’t have the Shirley travel from AL to OH without putting it to good use ASAP.

So today I went meat shopping.

20lb Angus Choice Brisket
6 racks of St Louis Ribs
1 whole pork belly (15 lbs or so)

I hope that’s enough...
It’s just me and the wife.

just be sure to not cook it all at one time, cuz you're going to want to keep cooking on it after that first time!

John, Small freezer, or what??
Knowing you, I am sure that Shirley is going to get a work out, and what you bought would only cover a weeks worth of fine smoking.
