There’s No Cure....Yet

.. i honestly never thought of that before myself, til now, and am lookin forward to crackin summer sausages code now that i think i can turn one of my many igloo coolers into a little cure chamber with my extra bovedas

and i will let u know how my trial run in my smallest igloo cooler goes out

Update!

So I used a 48”x24”c60” grow tent for my chamber.
It resides in my basement which is perfect temp this time of year. I added a fan, a humidifier and some SS shelving.

First attempt was Bastruma.

Beef tenderloin, trimmed and silver skin removed.
2.5% sea salt
0.25% cure #1
Fenugreek, cumin & black peppercorn

30% weight loss at 57F/75%RH in my chamber
