Some Venison Beer Brats and Andouille
Picture heavy... sorry!!
First time using the new sausage stuffer that Kapn Tim sent not long ago... http://www.bbq-brethren.com/forum/sh...d.php?t=147078 Thank you again Tim!! Had a venison hind quarter roast in the freezer and wanted to use it before this deer season. trimmed and cubed the meat.. mixed with pork and pork fat.. I like a ratio of 3 parts venison to 1 part pork fat but this time I added a bit more straight pork. Divided the mixture in half... Used 5 pounds for each batch. First batch I made some brats.. For 5lbs of the meat... used 1 tsp mustard powder 2 1/2 TBS salt 1 tsp coarse black pepper 1/2 TBS sugar 1/2 TBS corriander 1/2 TBS crushed caraway seeds a couple of crushed dried cayenne peppers and made a slurry with one cup of cold beer... mixed inside of a 2 1/2 gallon baggie ... tried some of the hog casings that are easy to load... REALLY liked these. It was amazing how easy these were to use and how quick it went. The brats.... made a braid... Second batch I made some andouille... 10 cloves chopped garlic 1 1/2 TBS cayenne 3 TBS salt 1 TBS thyme 2 TBS black pepper 1 Cup cold beer for the slurry... made these smaller... wanted them for snacking during deer camp. simmered a few in beer then grilled... one of the brats with kraut, caramelized onions, bacon and spicy mustard.. Didn't get pics of the andouille bites... they went fast. Thank you again Tim, I love the stuffer!! It was sooo much easier for me to use than the attachment on my grinder. Couldn't believe how quick these were to make. Can't thank you enough. Thanks for looking! .

How did you know what my next two batches would be? I have yet to try brats and I've had 'em on the brain. I have done andouille, but not since I found out my son's basketball coach makes killer gumbo, so we're gonna do a little trading. Life is much better with that stuffer, yes? I've gazed longingly at those easy load casings - I'm gonna have to give those a shot. Also - I like the looks of that knife in the first couple shots - what's the story on that? Did you save any loose sausage to make a fatty or 2 with? Just amazing, Jeanie!

My grinder attachment isn't easy to use, I need three hands. lol Loved the easy load casings. They are a bit pricey but I was short on time and took the easy way out. The knife is an Old Timer... I have one I use when camping... I love it so much I got one for the kitchen too. Didn't think to save any of the sausage for fatties.. Will try them next time.
