Chart was incorrect, didn't include all the data - here's the correct one. Note the gradual drop in top grate temp once the water in the water pans dried out.

And what I really learned from this graph is, it's best to cook at night if you've painted your drum black.
 
Those exhaust look kinda small? Most use a 2" exhaust or 8 3/4" holes.?
 
What would larger exhaust holes do in that case?

More Daft = Cleaner Burn
If exhaust is not adequate it can give harsh or bitter smoke taste and not reach higher temps. I like 275* for all things BBQ.

Yes i'd agree you need way more exhaust, especially to be able to do hot and fast cooks which you'll most likely want to do sometime. Air in, air out
