This was my second try at fatties on my ECB, got inspired at the store while picking up some Butt and Ribs for tomorrow.

Pork Sausage, rolled out, stuffed with Portabello Mushroom and Wild Rice, Cheddar Cheese with Chilpotle Peppers & Craisens.

Rubbed with Pecan Rub & get this, French's Fried Onions, crumbled up almost like Bread Crumbs then re-rolled in the goodness.

Out of the smoker 3 hours or so later, internal temp, 170°.

I really need to expand my fatty cooking. Those look incredible!!
 
I like the french onion idea. Did they get crispy or did they stay soft with all the fat rendering out of the fattie?

A little of both, mostly the underside was a little soft, but the top remained crispy. They were delicious.

Thanks for all the great comments folks, my wife still thinks I'm crazy for taking pictures of my food...:confused:
