Talking Smoked, pulled chicken tacos! (pron)

So I had a hankering for some smoked chicken. I thought of a few ideas and decided upon Smoked Pulled Chicken for homemade tacos!

Got a roaster out of the deep freeze, rubbed it down with Simply Marvelous Sweet & Spicy.



Got the small set up for indirect.



Loaded with lump and Apple wood, after coming to temp, in goes the bird.



Got my daughter to help me make some fresh Pico de Gallo.




Keeping a close eye on temps, almost ready!



Pulled off the carcass and mixed up with a can of Enchilada sauce.




And the final plated product! Served with the norm, cheese, guac and sour cream. It was fantastic!

Looks great and you have a good helper there.
Had some beef tacos last night from a smoked chuckie I 'converted' to taco meat. One of our go to - mid week meals.
