Default • Far-from-lean Pork Chops

Hey Everyone.
I saw some comments recently about pork chops being too lean nowadays. I kindly disagree . I got some nice chops the other day and thought I'd pull 3 out of the freezer for dinner. Seasoned them simply with evoo and some of my "Hog Dirt". Reverse seared them with some lychee smoke and threw on some SBR (honey chipotle) at the end. Came out great! Did some steamed veggies on the side too. Here are the pics:

Just curious, do you know what breed of hog those chops came from? I'm wondering if there are still some heritage breeds in Jamaica that haven't been bred for lean, like most pork here the states.
