6 Spares on the WSM

I have to say because for some reason I’m super critical on everything, I’m not wrapping in foil again. It’s amazing how 4 years away from cooking BBQ you forget things. As soon as I brought the foiled ribs in to unwrap, I had flash backs. Not to say it’s a bad method just not for me. I’m never wrapping again. Thanks for listening to my rant. My wife is watching me type this and thinks I’m nuts. The whole family loved the ribs it’s only me obsessed with the details.
 
I put two on the bottom and two on top. I make ridges at the end so if they leak it will pool. Then put a third in the middle. So far it’s worked.
I do like the water pan with my brisket and butts.
