Default Water Pan In The UDS?

I was wondering if any one has tried this yet. If I used a stainless mixing bowl like this one,http://www.chefscatalog.com/product/...ing-bowls.aspx, could I set cooking grates lower than the standard 24" from the fire basket? Just trying to get more capacity from a drum. Any thoughts?

There was a thread on this some where. ill try to find it. i think he tried and it really didnt work as well as he thought it would. I wish i could squeeze another rack into mine. guess the next one will have to be taller than 34" or what ever they are.

I have set a smaller grate on top of the firebox then placed the water pan on that. I have used it several times works just fine. However I have not tried adding another grate. Maybe you could try it with the original grate in place but lower a temp prob down to the level where the second grate would go.

How's this goin?

txschutte, I have 2 grates in mine. They work well for chicken parts and ribs. Ok for smaller butts and flats. Only the largest pieces are they to close together. I use the drum lid, not a weber lid. with a weber lid, 2 grates would be no problem.

Shane try this, since you guys know how to take the lid off... you could get at least 3 grates in this....I just cut below the "bow" pound, sand, pound, sand, pound sand.... remember I'm mechanically disabled!
