Default Beef Ribs...it's what is for lunch!

Some people at work have been wanting some beef ribs, so I decided to cook up a couple of racks last night for a lunch today. Went with some smoked sweet baked beans and smoked cabbage.

Started Wednesday night with some Peppered Cow rub. First time using this rub, so we'll see how it comes out.


After work last night, got home to make up the sides and get the meat going.


Everyone in the pool.


Cabbage and Beans done




Racks got done about 30 minutes a part.




Everything is in the oven in our breakroom getting reheated for lunch.

I'm not a big fan of veggies to begin with, but the cabbage was really good. I think I'll season it up a bit more next time.

The lunch turned out great. The Pepper Cow was good.

I love the smoked cabbage and baked beans idea!! Makes me want to try to smoke a half head of romaine lettuce for a smoked salad....
