Sometimes, simple is better.....And this combination has become somewhat of a tradition with Tim (GreenLeafBBQ) and myself. Jimmy Dean Original was completely out of stock due to a sale, so I went with a roll of the Hot instead. Coated liberally with John Henry's Sugar Maple Rub, and put it on the BGE.

Dang that looks great. I like a nekkid fatty myself - and smoked gouda is one of my favorite cheeses. Very nicely done!

For the newer Brethren who think that a fatty has to be stuffed and enrobed in cured meats, THIS is how you cook a fatty! Naked and beautiful and ohhhh sooo good!

This goes back to the roots of the Brethren when Brother Smokey Pig cooked the first breakfast sausage roll and Brother Big Dog christened it the Fatty!

Very nice! I'll probably try a bacon wrap one of these days, but I just keep making them similar to this. I may push a few jalpeno and onion chunks into the top or middle, but I enjoy them relatively simple as well.
 
I think we need to see some Brethren Ale-bash thingy happen when they open.
