Clean burning fire?
I am just not satisfied with my results. For example for my ribs, I've used mostly foiling methods such as with honey, brown sugar, etc. and I've always thought that they tasted decent.
But the other day, I had some spares rubbed with nothing more than salt, pepper, and maybe a little bit of garlic powder and they tasted so much better than mine. They had a much "cleaner" smoke taste and I could really taste the pork. This is want from my ribs. The ribs were cooked in a Southern Pride smoker which is basically a rotisserie oven with a log burner (maybe this is why I felt that the smoke taste was so clean?) I'm thinking my fire may not be as clean as it should be. I get that dark flaky build up under my lid and the smoke flavor isn't the best on my ribs. I want to try PitmasterT's hot and fast method, but I'm afraid to shut down my smoker when the ribs start "weeping" because he specifically says to make sure your fire is clean. I use minion method on my WSM with lump charcoal and wood chunks, usually sort of hot-and-fast with temps from 270-320. I'm thinking the problem may be that I've always left the lid vent like 1/2 open. Maybe it should be fully open so that smoke doesnt stay in for too long? Are there any specific ways to make sure your fire is clean? Here's an example of what my fire may look like:

Sounds like the only thing you're doing wrong is the lid vent. Keep it fully open unless you are shutting the unit down. Control your temperatures and draft with the intakes only. This should solve your problem

That seems odd, being that lump is nothing more than pyrolyzed wood. Any briquette, no matter how natural it claims to be, still contains binders and other impurities. This is not a lump vs. briquette argument, just that I don't see how pure wood, minus water and impurities, can leave an off taste.

Vent open. Then look to vary/change the lump. I've varied these quite a bit but keep coming back to the good old standard of Kingsford and nice dry hickory.

I hear what you say about the Southern Pride cookers. They cook great barbecue. If I were in your shoes, I would try one run with only lump charcoal and a handfull of wood chips. Disperse the wood chips evenly throughout the charcoal. Outside of burning straight lump, that's about as close as you'll get to burning a clean fire. Best of luck.
