Default Pastrami and Chicken.

With my kids in taekwondo and going 3 times a week this has cut down on my cooks during the week.

Did a pastrami I saw on sale. This was Mondays dinner.

Seasoned with fiesta brand.



Of it went to the weber performer. I'm not sure at what temp is was cooking at but cooked until probe tender.









Plated with julienne cheesy potatoes and green beans.



Wednesday dinner was done on the mini with a chunk of applewood. Brined for 48 hours and few spices I found in the cabinet. Seasoned with fiesta brand chicken rub.





Then I did a final sear.



Chicken was very moist and delicious.

It's a store bought packet. I added more cheddar and pepper jack cheese.

That pastrami looks really, really nice. I may have to steal your idea. Usually, pastrami is rubbed with coriander and black pepper only, however, mixing up the rub could go a long way to making it a completely different flavor. Nice job.

They call it taekwondo. But I do hear them refer to it as karate from the instructors.
