Did me some St. Louis spare ribs last weekend. Have done Baby Backs in the past, first time with STL ribs. Seasoned with some APR (all purpose rub) and vacuum packed it overnight. Used pecan and apple for smoke. Foil wrapped with brown sugar, butter, and agave. Finished with some glaze made with juices and Jeff’s BBQ Sause. Turned out great! Only did a rack and half for me and my wife so we had plenty of leftovers. Served with sweet corn and instant pot potatoes salaf.

What temp did you cook at? Were they done about right, or slightly overcooked?

Thanks! They were cooked at 225, done just right. Came off the bone with each bite, not all at once.
