Stuffed Pork Loin w/ pron

Made a small stuffed loin on the kettle last night that turned out great. Indirect around 350 deg for 2 1/2 hours til it reached desired temp. Stuffed w/ a cornbread mix consisting of crumbled cornbread and some seasonings pan fried for a few minutes in butter. r covered the stuffed loin in EVOO and rolled it in the leftover crumbs, and added a little frsh ground black pepper and sea salt. I was suprised by the little ring I got from the small hunk of mesquite I tossed in the coals.
