Suggestions from those who vend in comps

Need some advice, looking to vend for the first time this year at contests. Looking at selling BBQ Sundae (beans, pulled pork and slaw on top) in parfait cups so you can see the levels, pulled pork wraps and smoked shrimp on a stick along with bottles of ice cold water!
What do you think? any help in coming up with new stuff or if you feel from your experience that this will sell. The goal is to make enough to buy our catering rig by the end of the summer! Thanks for your advice and suggestions in advance!
 
Boss Sounds like you have a good plan

Thanks , I just finished up two cases of pork butt to have some ready to go when we get there. Food savered it and in the freezer. Plan on cooking another case on site for the aroma effect:-D

Are you providing utensils?
 
Smoked turkey legs are always a huge hit wherever I go. It seems they are more popular with the kddies, and they are good "walk around" food.
