Shower Butts
Wedding shower today for my new daughter-in-law, so I'm in charge of meat. Doing it hot and fast like this - http://www.patiodaddiobbq.com/2012/0...lled-pork.html, I followed this before and they turned out great - http://www.bbq-brethren.com/forum/sh...d.php?t=143108.
Got home last night about 1am, pulled the butts out of the fridge and gave them a good covering of Plowboys Yardbird, and them put them back in the fridge to rest for a few hours...... rinsed and dryed..... Rubbed.... After resting for about 5 hours... They are on and rolling along at about 330 right now. Will throw up a couple more pics at the 3 hour mark. |

Been a chore to keep the Chargriller Pro at 325, but that's what you get when you are smoking in 10 degree weather.....gotta love MN. It's actually been holding pretty well, just going through a ton of charcoal.
1.5 hours in....... After 3 hours...IT is 161...putting in the foil...... |

That looks so good. When wrapping, do you lose your bark?
