I only cook with wood with the door open when I am trying to maintain 250* inside the cabinet for low temp grilling. Or if I am running multiple grates. Much easier to watch/control. Real easy to grill/smoke that way. Like a Santa Maria type grill , but the wind does not affect it.
From 300* up (door closed), I use my intakes and exh's. I have 3 2" intakes and 2 large exhausts, 2X3 if I remember.
I can also (door closed) use a water pan at the bottom and smoke burning pure wood at 225*. Which I also do alot.
Besides just using coal/wood chunks.
