Thanks, guys. So far so good considering I've only had two hours of sleep. So far briskets and butts went on around 4:30. Won't have to do anything now until those get pulled and the ribs, chicken, and sausage go on. Crew is coming in at noon to prep all the sides so I have a few hours to get a little rest at least.

Speaking for myself, I think a lot of us at least dream of opening a restaurant and maruboz is living that dream. He's sharing the details with us and I feel like we're a part of it so heck yeah! We want him to succeed. And everything I see in his posts tells me he knows what he is doing and will do well.

The smallest brisket finished about two hours ahead of schedule, but oh well. This one is going to produce some serious burnt ends. Problem is now my mouth is watering and I haven't had lunch yet.
