We're having a virtual pulled pork night over here which means some guys (and 1 girl) are smoking some pork overnight for 12 hours.
Some of us have done it before but there are many noobies like me who are doing it for the first time.:-D
The meat prepping pics are from yesterday evening and the rest is from tonight.
When I put up the meat up on the grill and put the lid back temps were rising very...very fast,I overshoot at 250 while I was aiming for 220.
Was fighting for about 20-30 minutes to get it stable to 215 (temp gauge with smalle stem on side of the UDS).

Thanks allready.
Forgot to mention that she's cruising steady at 215F with the ball valve 3/4 open and the other two intakes closed.
Smoking with Ecobrasa coco briquettes and Hickory that Noskos mailed me.
At 01:00 I dunked the slab onto the grill,it's now 03:00.

Temp stays at 225F,internal temp is now 182.

Saw the ball valve thing for the first time on N8man's drum.
I ain't as tall as he is but I sure love the Lazy man mod.

It's ready Dr.J!
I'm very happy!
Didn't taste it yet,just a tiny piece to sample.
Have to prepare some sides.
Within a couple minutes I'm gonna pull the pork to shreds and fire up again and throw some other stuff on there.:grin:
If y'all need me I'm in the garden.:grin:

Sorry for keeping you guys waiting again but here's the end result.
Dennessy came by and had a nice surprise,he rolled up some Potatoe Bombs and a Fatty.
His firsttimers.:-D
He's now also addicted to smoking!:-D
