Well after reading a couple of threads last week, I got the urge for Gumbo. Now I was thinking on incorporating some other ideas like, Booyah, which is Northern Wisconsin Chicken Soup on Steroids and White Chicken Chili into a Gumbo mix. After further review I made pure Gumbo. Many thanks to:

Sure did add the flavor.

Started out with a 5.5# fryer which was brined overnight in Kosmos Chicken soak and then rubbed with some Todd's Bayou Dirt and then smoked over apple, Beer Can Style.

Next up, I made the chicken stock from 5# of cutups, oinions, carrots, celery and some Thyme.

The next day, shredded the chicken, and beagn making the Cajun Naplam. Added the Holy Trinity and some red bell peppers :thumb:, I like those. Simmered with the smoked sausage and added the chicken last. Made up some skillet cornbread and served over some brown rice. Added some File Gumbo to my bowl and we had magic, here. Enjoy.

Smoked beer can chicken, andouille sausage, creole seasoning and all-of-it 'blessed' by the holy trinity. LOVE IT!
