Started about 5 lbs of bacon today here's the rub I use for anyone curious.
5 lbs pork belly, skin off
1/4 cup kosher salt
2 tsp curing salt #1
4 tbsp coarsely ground black pepper
4 bay leaves crumbled
1 tsp freshly grated nutmeg
1/4 cup Dads home made maple syrup
5 cloves garlic, smashed
Up dates to come in 7 days
