Default Prime Rib done with pron

Ok, so I have been dry aging a full prime grade rib roast for Christmas and the other half will be used for New Years dinner.



the whole rib roast, prior to cutting. Had a little funk on it, but not too much.



I cleaned up the funk



I cut off three ribs for Chrismas Dinner. The remainder went back in to continue to dry age.



I used a combo of Todd's Bovine and Pappy's Prime Rib seasoning



I seasoned and tied the ribs back on, so one cut and there were ribs for dinner too. Too bad, I did not get any of the, the boys and my wife said they were great.



Into the Stump's at 245



Four hours later (plus a 20 minute rest in the Cambro) it was an internal 125 and it is ready for slicing.



Ready for plating. And of course I forgot to get a picture of the completed plate with side, as everyone was hungry.

However, I am looking forward to using my new gift from my wife for roast beef sandwiches.



It was a great christmas and I hope all of the brethren had a very merry christmas.

How was the combo of Bovine Bold and Pappys? Which Pappys did you use?

Thanks Larry,

The combo was good and I used the combo because I could not make up my mind on which rub to use. The Pappy's is the "Prime Rib Rub" and it has the expected Prime Rib flavors with a rosemary over tone. I found it last year at Smart and Final.
