Caldo De Res
A local Mexican restaurant makes fairly tasty Caldo de res (beef soup), but I ran across some nice looking beef ribs and wanted to make a pot at home.
The beef short ribs... picked up some corn... started by lightly smoking the beef ribs and onions in the drum.. then added a pot of tatoes, garlic and beef stock to the drum.. when the beef ribs had enough smoke and color, I added them to the pot of tatoes.. and let em go til tender... The ribs were nice and tender... Next came the cabbage... corn and summer squash.. (cause I had the squash on hand) I let them simmer til tender... added cilantro, salt, pepper, a bit of mexican oregano, I think that was about it. topped with onions and supper was ready. The rib meat was tender and the broth came out very rich. I hit it with some fresh squeezed lime juice and chili lime hot sauce.. The pot took on the smoke well, I was happy with the outcome. I'll be making it again in the future. Thanks for looking!

Thanks Ron! It came out richer than the restaurant's but I don't think they use beef short ribs.

Thanks Greg! It was pretty flavorful. The restaurant adds cooked carrots to theirs but I don't really like them cooked. lol
