I have a quick question guys. I am new to the possibility of doing caterings. I have been wondering with so many pop ups I see on Instagram with people that only have a smoker on a trailer, how do they do it? I was under the impression that you need to prep/cook food on a truck that has a kitchen or in a commissary (I assume they have permits and insurance) and all i see is a smoker on a trailer and a folding tent. Is it that they cook/prep in advance in a commissary and they just go sell once the food is done? Is that allowed? :crazy:
 
My guess is many people do not cater legally.

That is why when I give someone a price they tell me there buddy can do it way cheaper.

I tell them if course he can, he does not have commercial equipment, does not have 2 million dollars of insurance, he does not buy any license.
 
It all depends on where you are located. When I went into business you had to have everything that you described above. Now they HD will let someone pull temporary permits and set up 4-6 times per year. Drive 20 miles from here and the HD there may say kitchen required.
 
Some may be operating without a license and others may be operating with a temp license or the HD is really lax on their regulations. I've seen pics online of people trying to sell food trailers and food trucks that are operating and licensed in their state that would be laughed at here in Mn. Every health department is different.
