Default Fathers day Brisket

The wife wants an early supper so the fire is lit. Should be at cooking temp by 1 am.
Couldn't get the brisket whole but this should still be tasty when it's done later today! Used Meatheads BBBR and dry brined for 6 hours.

It's all brisket. The butcher at the store cut it up and tied it into roasts. They didn't sell any whole.
