I like the first guy's knife skills, but the second guy's attitude.

Loved watching these videos. It really makes you appreciate what the whole animal can offer. It also makes some of the most popular cuts (especially beef) look pedestrian.

I've been lucky enough to cut up a dressed half of pork and a full carcass down to primals and some european cuts you don't often see in the US. If you ever get a chance roast, braise or BBQ a pork collar. The most delicious part of the pig.

Somebody once told me that Sonny's BBQ out of FL uses the pork collar for their sliced pork.... Super Tender!! Not sure if it's true?
