Trouble keeping temps up on my UDS

Now that you have your air flow problem solved, you can work on your technique. Overshooting your target temp by 100-degrees, and then choking off all your vents to bring it down, isn't the best way to go. Good luck!

That was just for science! I wanted to see how hot it would run and how long it took to get the temp back down. If I had stopped at 225 I wouldn't have known if the temp problem was solved.
 
Start with your fire hot, and catch your target temp on the way up, then you don't ride the temp roller coaster...
