Default Boneless Beef Rib Chili

I see boneless beef ribs in the “sell by” discount bin frequently. I never have used them for Chili. But I may use this as a guide. Obviously I will tweak it, I don’t need five gallons of chili. Great ideas for ingredients here. I’m usually a no bean chili, but not always. I prefer baby reds or a firmer texture pinto when I do.

Ingredients
Boneless beef ribs
bacon fat or evoo
salt
pepper
small yellow onion diced
cloves garlic minced
canned crushed tomatoes
beef broth
strong brewed coffee
beans - optional
adobo sauce from chipotle peppers
bittersweet chocolate roughly chopped
ancho chili powder
cumin
oregano
Gebhardt or Mexene Chili Powder

Sounds good and I say yes for the beans. But coming from STL, we don't have many hang-ups about chili ingredients. My last bowl of chili definitely will have beans.

Never tried coffee in chili, but sounds good, especially with the beef ribs.

I use 1 square of semi sweet chocolate roughly chopped and add it in the last hour of cooking. Sounds good!

Looks like a good recipe. I add a little bit of sugar to my chili. I like a hint of sweetness.

Perfect looking recipe. I would slip a little beer in too. Beans are up to the individual. Gebhart is my favorite powder. Chocolate goes so well in chili

This is the recipe I follow quite loosely. Just to get the proportions of the major ingredients.



1 1/2 pounds lean ground beef
1 onion, chopped
1 small green bell pepper, chopped
2 garlic cloves, minced
2 (16-ounce) cans red kidney beans,
rinsed and drained
2 (14-1/2-ounce) cans diced tomatoes
2 to 3 tablespoons chili powder
1 teaspoon salt
1 teaspoon pepper
1 teaspoon ground cumin
Made it last week using beef shoulder, soaked pinto and black beans, and fresh tomatoes.
Edit:
2 lbs of fresh tomatoes is about right. I cut them in half and grilled them with cherry wood until the skins slipped. Then smoked the beef.
And I used about 1/2 lbs dried beans, soaked.
Yours will vary, I know.
