After a long night, started smoking at 9pm, went to bed at 1am with temp steady at 250, woke up at 5am with temp at 100. Stoked the coals, woke up at 9:45, temp again at 100, stoked it again and maintained about 225-250 the rest of the day until 4:30pm, pulled and chilled for an hour.

It was injected with apple cider vinegar, lemon juice and lime juice. Meat was a little dry. I'm thinking because it probably spiked up to 300+ after I stoked the fire at 5am. Next butt I'll try the foil pan method.

Gotta work on getting the thing to maintain temps longer than 2-3 hours without throwing on more fuel. At this point, a custom fire pan is probably required, and a custom exhaust, weld over the two exhausts on the side, and keep the two bottom intakes.

Didn't use the water pan this time. Should I just fill it with sand and leave it in there?

the square thingy with two front doors. It's not round like an ECB.

Anyways, all the fat rendered out of the butt, and it pulled SO easily. Gonna have some for lunch today and it should be even better.
