My UDS "Bottoms Up" Quick chic!

I have done it now for sure, my third UDS.This one has a partial barrel extentision at the top.The high dome of the kettle bottom gives me room for three meat racks and a water pan rack down low. I wonder how much meat I can cook at once with this baby? There is nothing left of my 22.5 weber silver except the wheels, leg pipes, ash pan. I decided to give this a try and see how it would work. My wife named her "Bottoms Up" Today I cooked some chicken thighs on her for lunch. Testing out the high end temps.

It worked really well at the high end and I was surprised at the final temp.

I was thinking the chicken would take 45 minutes. It was done in 35 minutes

It was crispy and delicious. Thanks to all of you for your tips and advice here.

Do you leave the heat reflector (water or sand pan or whatever) out to achieve those high temps?
 
Also, isn't it illegal to paint compressed gas canisters?

To be fair, though, the matching yellow propane tank is pretty cool!
 
I'd be worried about the vent scraping bad stuff onto the food during the cook while making adjustments.

I think I would try relocating outside, good idea though

Not that I am aware of. I don't think you can cover up the safety label which I left. I had no trouble getting it filled. probably should check on that before you go painting one.:-D
