Quintessential Chatty Farker
I found a tri-tip in my freezer that was nicely marbled so gave it a nice coating of The Rub Co's Santa Maria Style and fired up the pit with Live Oak/Coast Oak/Red Oak.... lotsa names for the same thing.
Gave it a quick sear then let it rip.
Pulled about 132 and let it rest for 20 minutes with a foil hat
