ABT japeleno question

Made some ABT's for the first time on Friday.

Cut up 10 japs, removed seeds and filled with cream cheese, cheddar, and a little smokie.

Had other stuff in the uds so I didn't have room for all the ABT's.

I ended up putting about half a dozen in the oven at 350.

I ate some of the ones cooked in the oven, then had to leave and do some coaching. I thought they were very mild.

My wife ate some off the smoker and was complaining about how hot they were. Nothing new she doesn't like hot food.

I reheated some from the smoker on Saturday and they were screaming hot.

So my question is, did the higher heat of the oven break down the heat in the jap? Or is it just a variation in hotness between japs?
 
The more the peppers cook the milder they get, so the ones in the oven were probably cooked more. The heat also depends on much much of the membrane is left inside, but that usually makes one hotter than another, not a whole batch.
