Default Grinder question for making ground chuck

I have read posts about grinding your own chuckeyes for burgers. I mentioned this to my wife and she says that her mother has an old manual grinder that we can have. GREAT! My question is this, I have attached a photo of the old grinder for reference but there is not a (what I believe is called) hamburger plate; the round metal disk that makes the long thin strands of meat after it is ground. The unit I am using is old enough to not have that piece but in reality do I need it? Does it impact texture etc without it? In the end I just want o know if what I have will actually work for grinding chuckies in to burger meat. Thanks for any and all advice.

Check the kitchen out. Your wife may have a Kitchen Aid Mixer. Buy her a grinding attachment for it, it comes with several plates. Works great---- Hang the antique on the wall. Florence, KY. via Northern Alabama

Bama - The plan is to try the manual grinder first to try it out & then invest in the attachment for the Kitchen Aid. I just do not know if the grinder will work without the burger plate. I know it will grind the meat well, just not sure if it will impact texture etc without the plate that newer models have.

just saw the picture. looks like a decoration. if you want to grind hamburger, just buy the kitchen aid attachement.

Being I enjoy nostalgic goodies, I say give it a shot. Might have to grind twice. Be sure to chill the grinder plates in the freezer. Seems to work better, at least that is my experience with manual grinders and grinding venison.

Get a small amount of meat and try it.

Okay, bought myself a 2# chuck to send through the artifact that is my grinder. I will use my priceless heirloom to grind up some meat for burgers and hope for the best. When all of you see me on antiques roadshow with this grinder & it is worth thousands of dollars you won't be laughing.

we actually use about four of those to grind our pork when we make Hungarian Kolbasz (sausage) that we cold smoke every November. Honestly, we use it because of the novelty, and because we like to sit around and drink all day while we make the sausage. Truth is, they suck to clean and work with, we usually always get the "new" guys to do all the grinding because of how hard it is to use. I agree with the others, get the Kitchen-Aid attachment, unless you want to initiate someone...lol
