One question to anyone who might care to answer: will the flat lid affect anything? a dome seems to be the default design for commercial verticals. Does it make a difference?
The commercial vertical smokers all have a grate at the very top of the smoker, so they need the dome lid to provide room for the food.

IMHO I dont think a flat lid will make any difference.

Congrats on the new smoker!!!!!
Then you aren't looking hard enough!!!

I still have to pick up another grate for the second shelf but I went and checked it about 2:30am and it was still holding at 225. Next time, I won't use as much coal.

Ribs were 3-1-.5 and still fell apart. Pics in a few.

Didn't need the door on this short cook at all. In fact, I had to keep taking the lid off to get the heat down. Imagine that. A cooker that wants you to peek.

Did you season it first? (smoker, not the meat)

Good thing this is no longer the Bandera Brethren, or we would have to drum you out. But seriously, congrats on your new smoker. I can sure see the advantages of it if you are using it on your limited space balcony. And as always, nice looking ribs man.
