Thank you for the kind comments! I don't make chickenfried steaks often, but they are one of my favorites.

Thank you Craig! Yes, I could tell the difference in texture. Most chickenfried steaks have a bit of a tug to them, they are fork tender but still have some "chew". This ribyeye was melt in your mouth tender. I really liked it.

I don't measure the seasoned flour ingredients. I usually start with 2 cups of flour, then start tossing things in. When the "color" looks right, I put a pinch of the flour on my tongue and give it the taste test. Adjust salt, cayenne, etc., accordingly.

I do enjoy green chile on just about everything, but wanted to go with skillet gravy this time. I had the "jelly free" half of the biscuit in mind to dip into the gravy bowl. lol

I really love green chile sauce with huevos rancheros!

That looks awesome. One of my favorites. Just wish I was in my twenties again so I could eat one without gaining 10lbs in a single sitting.

I was in Lubbock a few weeks ago and had a Green Chile Chicken Fried Steak. It was really farking good.

I'd be cool with weighing 400 pounds if I could eat that daily. My wife and I both love love love CFS but it's a very rare treat around here...but!...there is a holiday weekend coming up, right?...

That looks so good, Jeanie & I love the ribeye mod! I'll be having these pix floating through my head for a long time.
