Flat irons(pron)
Heres what for dinner! A couple of flat irons i picked up at my local butcher. One with dizzy pig red eye rub the other just a whiskey balsamic marinade.
Unfortunately the pics didnt save so this is the only finished pic I have

Looks good. I see a lot of rubs containing coffee. How was the steak with the coffee infused rub compared to the whiskey marinade?

I really enjoyed the coffee rub it had a ;little kick to it(family is a little soft when it comes to heat) but hey enjoyed the marinade.

I do love flat iron!
Question. I've always though the flat iron to be one of the most beef flavored cuts and potentially tender cuts out there, therefor I only ever hit it with some salt n pepper. I can see the rub working out well, but does the marinade impact the tenderness? Also how do you cook them? I like to hit w/ salt, pepper, and cast iron. 45 sec at high temp on one side, flip and get into the broiler for a min and a half. Rest, slice, eat. |

The marinade did not effect the tenderness I grilled them for about 15mins
