Bandera and Smoking 101
I'm relatively new to the smoking world. I am having trouble with some of my meat selections getting too dry while others don't seem to fall apart enough. Anyone want to give me some pointers.

Well, that is a real general question. What are you smoking and how? What smoker or BBQ do you use? Wood, electric, pellet, charcoal? I would refer you to the Roadmap
