Thank you Decoy. No, it takes on no smoke flavor as it is covered the entire time. Cochinita Pibil means "piglet buried" so this cooking method is trying to emulate burying the pig in the ground wrapped in banana leaves.

Great looking plate as always DH. I tried a "Carnitas" inspired butt one time. All the other flavors from the marinade disappeared except the Cumin. Man it was an odd tasking pork. I couldn't even finish it...
