Smoked Olive Tapenade.... and other stuff

I fired up my smokehouse this weekend and cool smoked a few items... I was able to keep the smokehouse at 110 and below. which worked out fine for these items.

I used a bit of pecan and apple for the smoke...

I smoked some olives...

Pecans, peanuts, coarse sea salt, clover honey...

A kosher salt/cracked pepper/onion/garlic mix, some turbinado sugar, and a pan of wasabi peas.

And the smoked olive tapenade....

Some olive oil, kosher salt, cracked black pepper, garlic, minced smoked olives, and capers....

Girl.....you've either got TONS of experience and just simply know what's good, or you are just willing to give anything a try!!!


Does the turbino sugar, salt and honey really soak up the flavor of the smoke? I'll bet those smoked pecans were MMMMMMMM!!!!


Was all that stuff for the tapenade?

Wampus the sugar, honey and salts take on the smoke really nice. I've found that the lower the heat and longer the smoke, the better.
Smoked olives are my favorite.... brined olives work better than olives stored in oil.
Not all of the stuff was for the tapenade... I was running low on "stuff" so it was a good time to do a batch. :)

Well Wampus and Cowgirl,I hadn't heared of smoked salt either till a month ago.
My girlfriend went to 1 of the very small Islands here in Holland and she bought me a little jar of smokes seasalt.
Very good!

It says:Schylger Salt,Crafted smoked with a mix of pure Terschellinger (the Islands name) wood kinds.

Maybe not the best translation but you'll get the idea.
A craftman makes these,you can't by it at our local supermarket over here.
You guys heard of smoked garlic?

It was almost 110 here outside though.. maybe I'll go lay some meat and wood chips on the patio...
