Default What to do with pork belly?

I smoked a couple pounds of pork belly yesterday. I'm going to finish it off one of a couple ways, and I'm open to others.

The first way I'm thinking it so cut it into smaller pieces (say 2" across) and just sear them on the grill, then serve with greens.

The other way is to quickly sear, then add a molasses/ancho sauce to cook onto the pieces and use as a dipping sauce. Served with grilled apples and asparagus.

One other way I considered is to heat it back up as is and serve on a Krispy Kreme doughnut.

Any thoughts, suggestions?

Bacon is great, but so is smoked pork belly. I grilled some free-range bacon this weekend, too.. .man was it good.
