This was ecode's entry in the 2012 "Get Baked" Throwdown.




As chosen by R2Egg2Q for winning the "Lamb Chops" Throwdown.

Here is my entry for this throwdown....
Puff pastry, wrapped around apple slices with a apricot glaze.

My first Throwdown entry!
Dessert on the smoker. Coconut cream pie. Pie crust was baked on the smoker, filled with coconut cream, topped with meringue and baked on the smoker until the peaks browned. Topped with toasted/smoked coconut garnish.

7 minutes @ 300 to decarb and then into the hot tub for 4 hrs



mise en place




let the dough rise



mixed the filling and glaze



rolled up and ready to smoke
