I figured I would try something different on my kamado joe.... I have got to say it was pretty delicious!!!

What is the skin like under the bacon, or do you remove the skin before wrapping it? They look amazing!

It was a little labor intensive cut of end of the drumsticks. .. then cut meat of bottoms of drum stick and wrapped bones in aluminum foil just so bones didnt get too dark... then I seasoned then wrapped in bacon smoked them for bout 2.5 hours at 230 degrees. .. was just sn experiment and turned out amazing
