Smoked Buffalo Chuck Roast w/ pron
I'm hopefully doing a 12 hour buffalo at 12 to midnight tonight if it doesn't continue to snow here in Mi.

Thanks guys, I'm going to bring her to 195+ before we eat her.
I'm debating if I can do it today or not because of our weather. And I'm debating if I want the Kansas city rub or my BBQ SAUCE on it. If I go BBQ sauce I was going to soak the roast in the sauce over night and smoker her Saturday! |

Just curious how the buffalo turned out...I haven't tried buffalo but thought it to be a lean meat. Not sure how it would smoke....so how does it taste??

I received a gift package of Buffalo meats and it was all very lean. I enjoyed it and would purchase it again. I liked it best in chili and stew.
