Default Mounting a Thermometer in a Smoker

How are you guys mounting your temp probe in your smoker? I drilled a hole in a hickory chunk, put the probe through that and place it on the rack by the meat.

I like to mount probes about 1/2" to 1" below the cooking grate.

My guru probe clips on with an alligator clip. Some people just stick their probes through a potato or something similar and toss it on the grill grate.

I have my ET-732 BBQ temp probe in a piece of wood just like you discribed. I didn't care for the grate clip. If you have a full rack of meet it was in the way.
