Do most people use the same sauce for Chicken, ribs, pork, Brisket
or do they change them
Same question with Rubs.

Well, I'm certainly not the guy to listen to, but I use the same basic sauce for chicken, ribs, and butt. No sauce on the brisket. Kind of a personal taste thing.

We match our sauces to our rubs to create a final "flavor profile"...this involves a lot of tasting as we are constantly trying out new things. You may come across a killer rub but the sauce just doesn't seem to fit when you put them together...or vice-versa...all I can say is...practice makes perfect.

JD is right...it is in the flavor profile....we practiced flavor profiles as much as timing in the beginning.....
